Veganism is on the rise as more and more people go meat-free. According to Finder, “around 6.7 million British adults currently follow a meat-free diet. While the number of vegetarians and pescatarians has remained very similar to last year, Finder’s research estimates that the number of vegans in the UK increased by 419,000 (62%) over the past 12 months.”

People go Vegan for a number of reasons, the most common being weight management, reduced risk of heart disease and diabetes and for eco-friendly or animal welfare reasons.

We asked our head chef how this change has impacted him and his team. He said, “we have to think more carefully about what dishes we put on the menu and how we produce a lot of the dishes. Mainly not relying on butter or fat to make the dish taste amazing. And researching and trying various meat or dairy alternatives [is important too].”

He’s made some changes to the operation at Langton’s at Coopers Hill to better accommodate vegan dietary requirement. Changes like:

• Reviewing each dish to allow for a vegan variation wherever possible.

• Always having meat and dairy alternatives in the kitchen.

• Using oils, instead of fats, in purees and sauces.

• Offering bespoke, made from scratch vegetarian and vegan options.

• Setting up specific meat-free prep stations.

• Training the team on meat alternatives and the Vegan method.
